Cannabis-Infused Pumpkin Spice Muffins

Makes 12 standard muffins or approximately 36 mini muffins 20 min prep time – 25 min bake time Ingredients 1 cup of white flour1 cup of oats3/4 cup of coconut sugar1/4 tsp of salt3 tsp of Baking powder1 tsp of Baking soda2 tsp of Pumpkin pie spice1/2 tsp if cinnamon3/4 cup of pumpkin seeds1/2  cup of pumpkin puree3/4 cup of milk1 egg5 tbs of cannabis infused coconut oil (melted) Topping ingredients 1/2 cup oats3 tbs of pumpkin seeds3 tbs of brown sugar2 tbs of melted butter1/4 tsp of pumpkin pie spice1/8 tsp of cinnamon Items you will need 2 large mixing bowls1 medium mixing bowlHand mixerSpatulaMeasuring cups and spoonsMuffins scoopCooking sprayMuffin tin standard or miniOven Method Part 1 Preheat the oven to 385 degree Ferenheit In a medium sized bowl, add all the ingredients listed for the topping, mix well and set aside. You will add this to the top of each muffin before baking them. Part 2 In a large mixing bowl, add the flour, oats, coconut sugar, baking powder, baking soda, pumpkin pie spice, cinnamon, salt and pumpkin seeds. Mix them together using the spatula and set aside this dry mixture.  In a separate large mixing bowl, add  the pumpkin pure, milk, egg and oil. Use the hand mixer to mix these wet ingredients together. Take the bowl with the dry ingredients you set aside early and add the dry mixture to the bowl with the wet mixture.
